Herbs and Spices

Herbs are the leaves, stems, flowers,or roots and sometimes seeds of plants and shrubs that are used
for seasoning, fragrance,or as medicine; spices-used for the same proposes-come from the roots, bark,
fruits or berries of perennial plants such as cinnamon, nutmeg, and pepper and cannot be easily grown
at home.

The aroma and flavor of herbs and spices come from essential oils that are released when
they are crushed, ground or chopped.Featured below are 11 hearbs that are often sold fresh in markets but
which are also easy to grown in the garden, or indoors in flower pot. Herbs and spices are a calories-free
way of flavoring foods while limiting the use of salt. When substituting dried herbs for fresh,
use one-third to one-half of the amount called for in the recipe. A common mixture of herbsis a amount
called for in the recipe. A common mixture of herbs is a bouquet garni, usual parsley, thyme and
bay leaf, tied in cheese-cloth.It is used to flavor soups or stews and is removed before serving
